Rosie’s Recipes – Burgers with a Twist!


Our Head of Events, Rosie is often the head chef on our challenge and respite holidays.

Over the years, she has introduced numerous recipes which have been frequently requested by our beneficiaries!

This week, Rosie is sharing her Burgers with a Twist recipe. It’s simple and delicious!

INGREDIENTS

500g lean mince or steak mince

1 x egg

1 x mozzarella ball sliced in to four

1 x onion finely chopped

50g mature cheddar cheese, coarsely grated

1 tbspn Panko breadcrumbs

2 tbspns Tomato ketchup

1 tbspn oil

Seasoning

Flour for dusting

Optional Extra : Rarebit topping

50g mature cheddar cheese, coarsely grated

2 tbspns of Worcestershire sauce

INSTRUCTIONS

Preheat the oven to 180c, 350f or gas mark 4

Place the mince, egg, chopped onion, cheese, breadcrumb, and tomato ketchup into a large bowl and mix well.  Add seasoning.   

Divide in to 4 sections and then again into 8.  Flatten one section of the mix and place a slice of mozerella on top and cover with second section.  

Roll together to form a ball completely covering the mozerella and then flatten in to a burger shape, coat with flour.

Heat the oil in a large frying pan and when hot add the burgers to brown them on both sides.  

Place on a baking try and pop in the oven for 30 to 35 minutes or until cooked through.

Optional Rarebit topping

Off the heat, place the grated cheese in a pile at one side of a frying pan.

Pour the Worcestershire sauce on top then over heat tilt the pan and stir vigorously for 30 seconds until it combines into an oozy consistency.  

Pour the rarebit mixture over the burger and eat!
